yum • Greek Potatoes

attention carbo'whores'!!

do you love potatoes as much as I do, despite their bad reputation?
what about Greek food?
olive oil, lemon, oregano...
salivating yet?

well if your interest is piqued, do I have a recipe for you!!
today I made the BEST batch of Greek potatoes that I have ever made.
I combined two recipes and HOLY YUM - I had to literally restrain myself from eating the entire pan!

so, if you are ever in the mood for THE most delicious Greek potatoes EVER, make these ;)














Greek Potatoes

Recipe by Rae Barthel
Ingredients
  • 4 large baking potatoes - peeled, cut in half widthwise, then cut in wedges
  • 3 cups reduced sodium chicken broth
  • 2 fresh lemons juiced
  • 1/3 cup olive oil (I use extra light tasting olive oil)
  • 2 tsp oregano
  • 2 tsp minced garlic (from jar)
  • 1 tsp salt
  • 1/2 tsp pepper
Cooking Directions
  1. Preheat oven to 400 degrees.
  2. Place potato wedges in 9" x 13" glass dish.
  3. Mix all other ingredients in bowl with a whisk. Pour over potatoes.
  4. Bake for 1 hour to 1 hour 15 minutes, depending on how you prefer the texture of your potatoes. (I baked them for 1 h 15 min because I like them soft)

I like you a latte

One last challenge card from my weekend card challenge marathon.....

I played along with the latest Fusion challenge (always one of my FAVORITES!)
When I tackle a Fusion challenge, I almost always use both the sketch AND the photo inspiration to complete my card - and this time was no exception...
here is my card:

Again, used some oldies, but goodies, for this card! The colors were inspired by the colors in the photo, particularly the blanket. The background paper was inspired by the book.
Such a FUN challenge, so glad that I made the time this weekend to play along!!!

Seriously, I can't believe I went sooooo long without card challenges!
The good news, is that I'M BAAACCCKKK..... and loving every minute of it!

So I found some time over the weekend to play along with some card challenges.
I combined the following challenges to make a card -
Simon Says Stamp's Wednesday Challenge: Add a Sentiment and Addicted to CAS: Ombre challenge


And here is my card:

The heart die and the sentiment are by Simon Says Stamp. I then added the panel of pink ombre shading behind the die cut hearts, and of course added a bit of bling and an extra splash of black with the addition of the black pearls.

you are one of a kind

happy Monday y'all!

So glad that I had the opportunity to play along with some card challenges over the weekend!
I tackled two fun challenges with one card - Color Throwdown's challenge #476 light blue, kraft and white color challenge, as well as AAA Cards CAS #107 Chilled challenge

And here is my card:

I was inspired by the snowflake and the hint of black (and of course the challenge colors!) in the Color Throwdown challenge.
And for the AAA Cards challenge, I interpreted the 'chilled' theme by using the snowflake and the 'you are one of a kind' sentiment, as well as the crisp, wintery color palette.

I am just LOVING getting into these challenges again.... I didn't realize how much I really missed them!!!!

fusion 4th anniversary challenge & simon says stamp patterned paper challenge

greetings!
this weekend was all about netflix and card making!!
I binge watched 'cable girls' - if you are a netflix fan, and happen to love period series... this show is set in the 1920's is Madrid, Spain... love, love, love the costuming, and subtitles... it has sucked me in!!
I also found time to get creative.... played along with this challenge over on the fusion blog
and simon says stamps 'patterned paper' challenge




and here she is:


No new or fancy products, just using up some favorite goodies from my hoarded stash....

color throwdown #475

greetings!

and here is what I created:


Nothing fancy, just using up some favorite goodies from my hoarded stash. Had fun with this color combination - not one I would normally use, but I treated the dots in the navy paper as aqua and pulled the front aqua panel color from those dots.
