new year, new everything

Happy 2018 y'all!!

How neglected this sad little blog has been...
The good news is that's about to change!
I miss blogging.
I miss creating.
I miss sharing my creations.
I miss the camaraderie of the blogosphere.

Like many of you, I also have SOOOOO many other interests...
like cooking, and music, and traveling, and ice hockey,
and getting healthy (just started Beachbody & the 21 Day Fix!)...
If you know me, I like to talk, and talk, and talk....
or maybe it's type, and type, and type...
I have a passion for sharing the things that I find that I love -
I always want to shout the good things I find or see or make from
the rooftops for everyone's benefit!!
And here (or some place like here) will be where I will do that!!
Hope you all will join me as I make, and do, and experience the new year!

creamy cauliflower soup
super simple. super tasty. south beach phase 1 friendly.
  • 1 tablespoon extra virgin olive oil
  • 1 small onion, diced
  • 1 head cauliflower, cut into florets, along with finely chopped stems
  • 4 cups low sodium chicken broth
  • 1/4 cup reduced-fat sour cream
  • salt & pepper to taste
In a medium saucepan, heat oil over medium heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add cauliflower. Cover and cook for 5 minutes. Add chicken broth and bring to a simmer. Cook until the cauliflower is tender, about 15 minutes. Either transfer soup in batches to a blender and puree until smooth or (what I do) use an immersion blender to puree the soup. Return to saucepan and whisk in sour cream. Add salt and pepper to taste. Serve hot, or chill and serve cold.
